Satvik food as we call it can also be tasty and delicious. And today, in this blog we are going to share 3 dishes that you can enjoy during your fasts. And trust us, they are so good that you will love to make them on regular days as well. 

New and Healthy, Yet Tasty Shravan Recipes 

Some of the recipes you can try this Shravan month are: 

Recipe 1: Amaranth (Rajgira) Kheer 

Rajgira Kheer Shravan Recipe at Viveda Wellness Resort Nashik, India

Process:  

Roast the 4 tbsp of Amaranth (rajgira) in a pan for 3-4 minutes; add 300 ml of coconut milk and keep stirring. Cook for about 10 minutes on a medium flame and add 2 tbsp of jaggery. Cook this until it becomes thick, and add chopped mixed nuts. Mix the portion and serve it.  

The kheer is rich in taste and nutrients. Without any processed sugars, the jaggery used in the kheer is ideal sugar with vitamin B12, BR, iron, calcium, phosphorus, magnesium, and more. Also, Amaranth is rich in antioxidants and fiber and helps maintain heart health, regulate blood pressure, and lower blood cholesterol. Add in the protein benefits of coconut milk along with the iron and vitamin C it provides, and you will have a healthy satvik food dessert. 

Recipe 2: Farali Dosa

Farali Dosa Shravan Recipe at Viveda Wellness Resort Nashik, IndiaPrep:  

Before starting the recipe, make sure to soak the Barnyard millet (Sanwa) in a deep bowl of water for at least 2 hours and then drain it. 

Blend in the ½ cup of sanwa in a mixer with 2 tbsp water and transfer it to a bowl. Add ½ a cup of rajgira flour, ½ a cup of sour buttermilk, and 1 tbsp of ginger-green chili paste along with rock salt, according to taste. Cover the bowl and keep it overnight to ferment.   

Process:

Heat a nonstick pan and pour a ladleful of batter on the pan. Spread the batter in circular motions to make a thin dosa. Put a little oil on the sides of the dosa until it turns golden brown, and then fold it over. Serve it hot with some peanut curd chutney.  

The dosa is rich in iron, vitamins, and protein. It has ingredients that make it suitable for controlling blood pressure during fasting and maintaining heart health.  

 

Recipe 3: Rajgira Paneer Paratha 

Rajgira Paneer Paratha Shravan Recipe at Viveda Wellness Resort Nashik, IndiaPrep:

Make the stuffing by mixing 1 cup of freshly grated paneer, 2 tsp of finely chopped green chilies, ½ tsp of lemon juice, ½ tsp of powdered sugar, 2 tsp of finely chopped coriander, and rock salt as per taste. Divide it into 8 equal portions and keep it aside.  

Now, using water, mix and knead the 1 cup of rajgira flour, ¼ cup of boiled and peeled mashed potatoes, ½ tsp of freshly ground black pepper, and rock salt according to taste. Knead until it becomes a semi-soft dough. Divide this dough into 8 equal portions as well.  

Process:

Roll the dough into a circle using some rajgira flour and place the stuffing in the centre. Bring the edges of the circle together in the centre and seal it tightly. Roll out the now stuffed dough again into a circle while ensuring the stuffing does not tear the paratha (dough).  

Heat a nonstick pan and cook the rolled-out paratha with oil until it turns golden brown on both sides. Take the paratha off the heat and serve it with some green chutney and fresh curd. 

While rajgira is rich in iron and vitamins, paneer provides protein. The chillies and lemon juice add to the taste and make the paratha appetizing.
