Ragi Modak with Apple Cinnamon Filling

Ingredients:
Ragi Flour: 1 cup
Ghee: 2 tbsp
Apple: 1 medium-sized (peeled, cored, and finely chopped)
Cinnamon Powder: 1/2 tsp
Jaggery: 1/4 cup (grated)
Water: 1 cup
Instructions:
Prepare the Dough:
Boil 1 cup of water.
Gradually add 1 cup of ragi flour to the boiling water, stirring continuously to form a dough.
Steam the dough for a few minutes to make it pliable.
Once steamed, knead the dough until it is smooth. Set aside.
Prepare the Filling:
Heat 2 tbsp of ghee in a pan.
Add the chopped apple and sauté until it starts to soften.
Sprinkle 1/2 tsp of cinnamon powder over the apples.
Add the grated jaggery and cook until the jaggery melts and coats the apples, giving them a caramelized texture.
Remove from heat and let the filling cool slightly.
Assemble the Modak:
Take a small portion of the ragi dough and flatten it into a disc.
Place a spoonful of the apple cinnamon filling in the center of the disc.
Fold and pinch the edges of the dough together to seal it, shaping it into a momo-like modak.
Repeat the process with the remaining dough and filling.
Steam the Modaks:
Place the shaped modaks in a steamer.
Steam them for about 10-12 minutes, or until they are cooked through.
Let them cool slightly before serving.
