• Sesame seeds (Til): 1/2 cup
• Grated jaggery (gud): 3/4 cup
• Rolled oats: 1/2 cup
• Chopped almonds: 1/4 cup
• Chopped walnuts: 1/4 cup
• Pumpkin seeds: 2 tablespoons
• Flaxseeds: 2 tablespoons
• Dried cranberries or raisins: 1/4 cup
• Ghee or coconut oil: 2 tablespoons
• Cardamom powder: 1/2 teaspoon
• Pinch of salt
Dry roast the sesame seeds, rolled oats, almonds, walnuts, pumpkin seeds, and flaxseeds separately in a pan over low heat until aromatic. Set aside to cool.
• Heat ghee or coconut oil in a pan on low heat.
• Add grated jaggery and stir until it melts completely into a thick syrup.
• Quickly add the roasted seeds, oats, nuts, and dried cranberries or raisins to the melted jaggery.
• Sprinkle in cardamom powder and a pinch of salt for flavor balance.
• Mix well until everything is evenly coated.
• Grease a square or rectangular tray with ghee or line it with parchment paper.
• Transfer the mixture to the tray and press it down firmly using a spatula or your hands (greased with a little ghee).
• Let the mixture cool at room temperature or in the refrigerator until it hardens.
• Once set, cut into bars or squares.
• Store the bars in an airtight container. They stay fresh for up to 2 weeks.
• Added Nuts: Provide protein, omega-3s, and healthy fats.
• Pumpkin Seeds & Flaxseeds: High in antioxidants and fiber.
• Oats: Adds whole grains and makes it more filling.
• Dried Fruits: Natural sweetness and a source of vitamins.
