Instructions

Prepare the Quinoa Base

Rinse and cook quinoa (1/2 cup raw yields 1 cup cooked). Once cooled, mix with finely chopped
cucumber, herbs, cumin, lemon juice, and salt. Set aside.

Blend the Dressing

In a blender, combine coriander, mint, soaked cashews, lemon juice, cumin powder, salt, and
jaggery. Add a little water and blend into a smooth, creamy green dressing. Adjust consistency as
desired.

Assemble the Bowl

Place the quinoa base in a shallow bowl. Neatly layer diced avocado, cherry tomatoes, cucumber
slices, and the grilled topping of your choice around it. Drizzle the green dressing over the top or
serve it on the side.

Garnish and Serve

Add lemon wedges and a few sprigs of mint or coriander for a fresh finish. Serve immediately or
chill for 15 minutes before serving for an extra cooling effect.
