Ingredients
¼ cup water kefir grains
4 cups filtered water
¼ cup organic cane sugar or coconut sugar
1 dried fig or a few raisins (optional, for minerals)
½ teaspoon molasses (optional, for extra nutrients)
½ lemon slice (optional, for flavor)
Instructions
Dissolve the sugar in filtered water.
Add water kefir grains and optional ingredients (fig/raisins, molasses, lemon).
Cover with a cloth and let it ferment at room temperature for 24-48 hours.
Strain out the grains and transfer the liquid to a sealed bottle for a second fermentation (if desired).
Store in the fridge and enjoy chilled.
