Day 2 – Rajgira & Banana Pancakes with Honey Drizzle



Who said fasting cannot feel like a sunday brunch. Rajgira & Banana Pancakes are fluffy soft and naturally sweet, made from amaranth flour with ripe bananas that melt in mouth. Cardamom gives little fragrance that make them taste festive even though ingredients are so simple.

What makes this a navratri fasting recipe to love is the drizzle of golden honey that shine over pancakes and balance earthiness with sweetness. Light on stomach yet feel rich on soul, this is fasting food dressed like celebration.

A special recipe for fasting in navratri that prove satvik food can be indulgent and dreamy without being heavy.

Ingredients (for 6 mini pancakes)

Process

  1. In a bowl mash the banana well. Add rajgira flour cardamom and curd. Mix.
  2. Gradually add water to make a smooth thick batter.
  3. Heat a pan grease lightly with ghee and pour small rounds of batter. Cook on low heat till bubbles appear then flip and cook the other side.
  4. Stack pancakes and drizzle with honey or jaggery syrup.

Soft fluffy and naturally sweet. A wholesome twist on the usual fasting flatbreads.
