Day 8 – Anjeer & Makhana Kheer



Anjeer & Makhana Kheer is elegance in bowl. Creamy milk slow cooked with roasted makhana and softened figs, touched with saffron and cardamom, then crowned with pistachio slivers. Each spoonful is smooth rich and layered with chewy soft and crunchy notes together.

What make this a navratri fasting recipe unique is how it feel indulgent but still light on stomach. It carry texture of nuts, sweetness of fig and comfort of milk all at once.

A fasting recipe for navratri that taste festive yet calming, like pause button in middle of the nine days.

Ingredients (serves 3)

Process

  1. Heat ghee in a pan and roast the makhana till crisp. Crush lightly with a rolling pin.
  2. In another pan boil milk till slightly reduced. Add roasted makhana and cook on low flame.
  3. Stir in chopped soaked figs saffron milk and cardamom. Let it simmer till figs soften and flavours combine.
  4. Sweeten with jaggery powder and cook for 2–3 more minutes.
  5. Garnish with pistachios and serve warm.

Creamy kheer with chewy bites of fig and crunch of makhana. A royal twist to the usual fasting dessert.
